This Jennifer Aniston Salad is the internet’s latest obsession – and for good reason! It’s fresh, crunchy, and loaded with flavor. I’ve seen this salad floating around and finally decided it was time to give it a try with my own twist and it is SO good. The combination of quinoa, chickpeas, fresh herbs, and crunchy pistachios makes it the perfect balance of texture and flavor.

To add a little extra protein and make it more filling, I added shredded chicken, which made it SO good. The macros on this meal are also amazing, with only 390 calories and 28g of protein.

This salad makes a great summer side dish (with no chicken) or meal prep option since it stays fresh in the fridge for 3–4 days.

You guys – it is SO good and has so much flavor and texture! I love the crunch of the pistachios and the flavor of all the fresh herbs! This is a perfect summer side dish, and it stores great in the fridge for a few days! I added chicken for some added protein, but you can leave it out to make this dish vegetarian.
