I’ve seen this salad floating around and finally decided it was time to give it a try with my own twist and it is SO good. The combination of quinoa, chickpeas, fresh herbs, and crunchy pistachios makes it the perfect balance of texture and flavor.

To add a little extra protein and make it more filling, I added shredded chicken, which made it SO good. The macros on this meal are also amazing, with only 390 calories and 28g of protein.
