Why Cottage Cheese Works So Well
Cottage cheese has become one of our favorite ingredients for healthy desserts because it blends into an incredibly smooth, creamy texture while naturally adding protein.
When combined with strawberries, honey, and vanilla, it creates a flavor and texture that’s surprisingly similar to cheesecake filling. Once frozen, the result is a creamy popsicle that tastes indulgent while still being made with simple ingredients.
Even if you don’t like cottage cheese, you’ll love these popsicles! My husband can’t stand eating cottage cheese on it’s own but he’s OBSESSED with these.
Tips & Variations
Use ripe strawberries: The sweeter your strawberries are, the sweeter the popsicles will taste.
Blend completely smooth: Don’t rush this step. A smooth mixture creates the best texture.
Freeze overnight: Six hours is usually enough, but overnight works even better.
Add extra cheesecake flavor: Mix a little lemon zest into the blended mixture.
Make them chocolate dipped: Dip frozen popsicles in melted dark chocolate before rolling in graham crackers.
Serve immediately after coating: The graham cracker coating stays crunchiest when added right before serving.
Storage Tips
Store the popsicles in the molds or an airtight container in the freezer for up to 2 weeks. For the best texture, add the crushed graham crackers immediately before serving.
