Sheet Pan Beef Kebabs with Tzatziki (Easy Weeknight Dinner)
If you love the bold, warm spices of a classic beef kebab but want something you can throw together on a weeknight without any fuss, this recipe is for you. These sheet pan beef kebabs are packed with flavor, come together in under 30 minutes, and are served on warm pitas with tzatziki, fresh veggies, and crumbled feta. It is the kind of dinner that feels a little elevated but requires almost no effort at all.
The sheet pan method is what makes this recipe so easy. Instead of forming individual skewers, the seasoned beef mixture gets pressed into an even layer on a lined sheet pan, scored into strips, and baked until perfectly cooked through. You get all the flavor of a traditional kebab with a fraction of the work and barely any cleanup.
Loaded with cumin, paprika, oregano, and red pepper flakes, the beef is incredibly flavorful on its own but the tzatziki takes everything completely over the top. Creamy, cool, and tangy against the warm spiced beef and fresh veggies, this combination is absolutely incredible.

Ingredients
Sheet Pan Beef Kebabs
Lean ground beef — the base of the kebabs. Lean ground beef keeps things lighter while still being hearty and satisfying.
Red onion — finely chopped and mixed into the beef to add moisture, sweetness, and depth of flavor throughout the kebab.
Minced garlic — adds a savory punch that runs through every bite of the beef mixture.
Salt, pepper, and red pepper flakes — the essential seasoning base with a little heat from the red pepper flakes.
Garlic powder — deepens the garlic flavor and adds an extra layer of savory depth.
Paprika — gives the kebabs a warm, slightly smoky flavor and a beautiful color.
Cumin — one of the most important spices in this recipe. Adds that classic warm, earthy kebab flavor.
Dried oregano and parsley — bring a subtle herby freshness that balances out all the warm spices beautifully.

For Serving
Flour pitas — warmed and used as the base for building each kebab. Soft, pillowy, and perfect for wrapping around all the fillings.
Tzatziki — the cool, creamy, garlicky sauce that pairs perfectly with the warm spiced beef. Store bought works great or make your own if you have time.
Tomatoes — adds freshness and a juicy pop of flavor to each bite.
Cucumber — cool, crunchy, and a perfect contrast to the warm spiced beef.
Red onion — thinly sliced for a sharp, slightly peppery bite that cuts through the richness of the beef.
Feta cheese — crumbled on top for a salty, tangy finish that ties the whole thing together.

Ways to Serve
- Spread tzatziki on warm pitas and load up with kebab strips, tomatoes, cucumber, red onion, and feta
- Served over a bed of rice or quinoa instead of pitas for a lower carb option
- Wrapped in a large tortilla with all the toppings for a kebab wrap
- Served alongside a simple Greek salad for a complete Mediterranean style meal
- Packed into meal prep containers with pita and toppings kept separate for easy lunches all week
- Drizzled with a little extra olive oil and fresh lemon juice right before serving for a bright finishing touch
Easy Swaps and Tips
- Protein swap: ground lamb works beautifully in place of ground beef for a more traditional kebab flavor
- Pita swap: naan, flatbread, or lettuce wraps all work great in place of flour pitas
- Tzatziki shortcut: store bought tzatziki works perfectly here and saves a lot of time on a busy weeknight
- Press it thin and even: getting the beef mixture into an even layer about 1/2 inch thick is important so it cooks evenly all the way through without any dry or undercooked spots
- Score before baking: lightly scoring the beef into strips before baking makes it much easier to break apart into kebab shapes once it comes out of the oven
- Let it rest before cutting: give the beef a couple of minutes to rest after coming out of the oven before breaking it into strips so it holds together better

Storage Tips
Store leftover beef kebabs in an airtight container in the fridge for up to 4 days making them a great meal prep protein for the week. Reheat in the air fryer at 375F for 3-4 minutes or in a hot skillet for a couple of minutes until warmed through. Store the tzatziki and fresh toppings separately and assemble fresh when you are ready to eat for the best results.
