High Protein Chocolate Chip Pumpkin Muffins (Healthy & Easy)

I know you guys have been absolutely loving our Pumpkin Spice Muffins, so I wanted to create a few more variations of these cozy fall treats. First up: Chocolate Chip Pumpkin Muffins. 🎃🍫

These muffins are everything you love about the original. They are soft, fluffy, perfectly spiced, and secretly packed with protein. The melty chocolate chips in every bite make them just a little more indulgent while still staying healthy and balanced.

Grab one with your morning coffee, pack them for school lunches, or enjoy as a late-night snack when you are craving something sweet but still want to keep it healthy. I have a feeling this version is going to be just as big of a hit as the classic.

Why You’ll Love These Muffins

  • High Protein – about 8g protein in each muffin
  • Chocolate + Pumpkin Spice – cozy fall flavor with melty chocolate chips
  • Quick and Easy – simple ingredients and 20 minutes in the oven
  • Meal Prep Friendly – makes 12 muffins that store well all week
  • Gluten Free – just use certified gluten free oats
  • Perfect Fall Treat – tastes like a coffee shop muffin but healthier

Ingredients

(Makes 12 muffins)

  • 2 cups oats (blended into oat flour; use certified gluten free oats to make gluten free)
  • ½ cup vanilla whey protein powder (I used Promix Madagascar Vanilla)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp pumpkin pie spice (or cinnamon)

    Tips & Substitutions

    • Protein Powder: Whey gives the best texture, but you can use plant based. They will just be a little denser.
    • Sweetener: Monk fruit keeps it sugar-free and lower calorie, but honey or maple syrup add more natural sweetness.
    • Chocolate Chips: Dark or mini chips work best so you get chocolate in every bite.
    • Make it Gluten Free: Always choose certified gluten free oats.
    • Storage: Keep in the fridge for up to 5 days or freeze for up to 2 months.

    Notes

    Recommended Protein Powder

I’ve tried sooo many protein powders over the years, and Promix wins by a mile. It’s made with high-quality grass-fed whey, contains no artificial sweeteners, and never leaves me feeling bloated. The Vanilla Whey is my go-to for baking (like these muffins!), oats, and smoothies, while the French Vanilla Vegan Protein is an amazing plant-based option.
Promix truly makes me feel my best, both mentally and physically. I love knowing that it’s made with clean, high-quality ingredients and none of the artificial junk found in so many protein powders. Plus, it tastes amazing and blends perfectly into recipes, which is a HUGE bonus!
You can use my code CLAIRE at checkout for 10% off any Promix products.
