I have been loving prepping a healthy lunch option ahead of time, it makes lunch time so easy! In the middle of the day I’m in the middle of work, chores, and whatever else the day is throwing at me. It’s so nice to open up the fridge and have a healthy lunch ready to grab and go!

Chicken salad has been one of my favorite lunches to make in advance, because it keeps so well in the fridge and you can serve it so many different ways! If you are someone who hates eating the same thing everyday, chicken salad is a great option because you can switch up how you serve it and it tastes delicous everytime.

  • With veggies – If you want something on the lighter side or are looking for a low-carb, high-protein lunch or snack, this is a great option! I especially love eating the chicken salad scooped onto sliced bell pepper and cucumber.
  • Open face toast – By adding in a source of carbs you will feel fueled and sustained throughout your day. I love toasting a piece of sourdough and adding a scoop of the chicken salad on top, it’s so filling and delicious!

This buffalo chicken salad is rich, creamy and full of flavor – it’s so delicious you won’t believe it how healthy it is! The key to making healthy chicken salad is to replace the mayo with plain greek yogurt. This is such an easy swap, and greek yogurt is so rich and creamy that you won’t even miss the mayo! Greek yogurt is also high in protein, so this is a lunch that you will keep you feeling satisfied all the way until dinner.

Instructions

  • Add cooked chicken breast to a large bowl and shred using two forks or your hands.
  • Dice the red onion, green onion and parsley. Add to the bowl with the shredded chicken.
  • Add greek yogurt, buffalo hot sauce, garlic powder, onion powder and salt and mix well. You can add more or less hot sauce depending on how mild or spicy you want it to be.
  • Eat right away, or store it in an airtight container in the fridge for 3-4 days. Enjoy!
