Roasted Shaved Brussel Sprouts with Pine Nuts


Give brussel sprouts the savory treatment by roasting with onion, pine nuts, and thyme. Although many people claim to loathe Brussel sprouts, they probably have never had them prepared in a way that tantalizes their taste buds. Just boiling them permeates the kitchen with an unappetizing odor, but that’s not the way they should be treated. When Brussel sprouts are roasted, these mini-like cabbages become nutty and delectable. In this recipe, Brussel sprouts are purchased already shaved and packaged which makes prep time faster, but if you can’t find them already shaved, simply run them through the food processor using the slicing disc. Because the shaved leaves are very delicate, you should watch them carefully as they roast.

  1. Prepare the following ingredients:

    10-ounce package shaved brussel sprouts

    1 cup roughly chopped onion

    1/4 cup raw pine nuts

    1 tsp. dried thyme

    Sea salt and freshly ground black pepper for seasoning

  2. Set oven temperature to 400 degrees. Coat a large shallow baking pan with cooking spray. Arrange the Brussel sprouts, onion, and pine nuts in the pan. Lightly coat with olive oil spray. Sprinkle the thyme over the vegetables. Season with salt and pepper.
  3. vegetables again and roast for another 5 to 10 minutes. Check frequently and do not let the delicate leaves over brown.
  4. Remove from the oven, taste and season with more salt and pepper as needed.
