Green Beans with Roasted Hazelnuts and Dried Cherries

 

Crisp green beans get the nutty treatment with this easy to prepare side dish, perfect for entertaining over the holidays. In this recipe, the hazelnuts are ground with dried cherries creating a buttery flavor and creamy texture with a hint of fruity sweetness. The green beans are garnished with coarsely chopped hazelnuts adding visual and textural appeal.

 

  1. Prepare the following ingredients:

    1 1/2 lbs. organic green beans, trimmed and cut into 2-inch pieces

    2 tbs. roasted hazelnuts, about 16

    2 tbs. dried cherries, about 20

    2 tbs. roasted hazelnut oil

    1/2 tsp. sea salt

    1/4 tsp. freshly ground black pepper

    Garnish: 2 tablespoons coarsely chopped hazelnuts

  2. Place the hazelnuts and cherries in a high-speed food processor and process until pulverized. Add the hazelnut oil and process until blended.
  3. Bring a large pot of salted water to a boil. Add the green beans. Cook for 2-3 minutes until crisp tender. Drain and transfer to a serving dish. Toss with the hazelnut mixture.
  4. Season the beans with salt and pepper tossing to combine. Garnish with the coarsely chopped hazelnuts.
