Immortalized by the popular song “Chestnuts Roasting on an Open Fire,” chestnuts are especially popular during the holiday season. They are a deep mahogany color with glossy shells. Chestnuts are mainly composed of carbohydrates and are low in fat and calories making them ideal for low-fat holiday recipes. They have a sweet nut-like flavor and fresh thyme, rosemary, parsley and chives enhance their flavor even more. Chestnuts can be roasted in the oven and can be eaten as a snack or substituted for nuts in holiday recipes, especially in stuffing.   1. Prepare the following ingredients: 1 pound fresh chestnuts
  2. Set temperature to 450 degrees. Using a sharp paring knife, make and “X” shaped cut on the flat side of the chestnuts before placing them on a baking pan.
  3. Roast for 30 minutes turning the chestnuts over several times while roasting so that they don’t burn on one side. Let them cool slightly and peel the shell and skin. The brown inside skin is bitter and must be peeled off while still warm.
