Fall Pear and Pomegranate Salad


This fall salad is gorgeous to behold and snap to prepare. Organic pears and brightly toned pomegranate seeds take center stage when united in this delectable salad. Pomegranate seeds are packed with a nutritional punch and are reported to provide a slew of cancer-fighting health benefits. In addition to their health promoting properties, these jewel-like seeds add a splash of color and crunch. The pears should be ripe but firm; purchase them a few days ahead and refrigerate if already ripe. If not, place in a paper bag for a day or two. Pomegranate seeds are generally available at this time of year. Buy them prepackaged to save time or buy the fruit whole and remove the seeds yourself.


  1. Prepare the following ingredients:

    8 cups organic lettuce, rinsed and spun dry

    2 organic firm ripe pears

    1 cup pomegranate seeds

    1/2 cup thinly sliced red onion

    2 small garlic cloves, peeled

    1/2 cup extra virgin olive oil

    1/4 cup white balsamic vinegar

    1 tbs. organic raw honey

    2 tsp. Dijon mustard

    1/2 tsp. sea salt

  2. Place the lettuce in a large salad bowl. Rinse the pears, cut into quarters, remove the core and cut into very thin slices or chunks adding to the salad as ready. Scatter the pomegranate seeds and red onion on top.
  3. To make the dressing, add garlic to a mini food processor and process until chopped. Add the olive oil, vinegar, honey, mustard, and salt. Process until blended.
